My name is Mark Nichols and I am the Executive Chef and Co Owner of JC’s Catering. I have been in the hospitality industry for 25 years and have worked every position from Dishwasher to Bartender, from General Manager to Executive Chef. I have earned these titles while working for many “Mom & Pop” restaurants, to corporate chains. Additionally, I have worked for Palo Verde Country Club in Sun Lakes AZ as well as many Fortune 500 Companies including Compass Group and Disney.
With no formal secondary education, in 2004, I decided to enroll at Scottsdale Culinary Institute Le Cordon Bleu. 18 Months later I graduated with an Associates Degree in Occupational Sciences / Culinary Arts while earning a 3.5 GPA in addition to being recognized on the Presidents List twice.
I found my beautiful wife and soul mate, Colette, while working in a restaurant in 2003. We were officially married in 2010 and have 3 wonderful children (one who seems to be following in her fathers footsteps). Colette and I officially started JC’s Catering in 2011 while I was still working a full time job as an Executive Chef for another company. In October of 2014 I finally stepped out in faith, quit my full time job and have been focusing on JC’s Catering full time without looking back.
Colette and I both have an extreme passion and love for food, service, and for Christ. We deliver that love and passion to every single client from the freshest ingredients we can obtain, to that final little touch that the client may not even notice, but we do.

My name is Colette Nichols and I am the Catering Director and Co-Owner of JC’s Catering. My first job in the food service industry was with McDonald’s when I was 15 years old, I have worked in the food/hospitality industry ever since. But I most certainly had no idea all those years ago I would own my own catering company.
My titles have ranged from server to manager. I have worked in everything from corporate chains to privately/family owned restaurants. My formal education includes degrees in both Business as well as Public Administration but my true passion lies in food, and providing joy through the food and services that we provide. Starting our catering company was a dream come true for both Mark and I. I love that our business is built on our passion not only for food but for the relationships we build with the people who begin as our clients but become our friends.
I am excited about our personal and companies future, we are not just about serving clients but those in need as well. Our greatest passion is feeding people, all people.
